My Christmas dinner - made by me - will be the Thanksgiving Dinner which never was: turkey, mashed potatoes & gravy, stuffing, cranberry sauce, and a green bean casserole.

well I am luckier, hehehehe my wife is doing it, all I know is lamb roast, I and my sons just add the rum,tequila, wine,and cocktails to it ::)

Since I am a native NEw MExican, I recreate NM Christmas recipes of my abuela, bisabuela and tias. I made the posole (hominy stew), empanaditas, and tamales ( I don't even try to make the tamales, I live in So. Cal, helloooo). Then I made NM traditional Christmas cookies: bizcochitos-kindof like an anis shortbread.
New Mexcio food has many deep rooted culinary traditions from Spain.
We celebrate tonight as we always have.

Below is a photo of MadridMan holding his prized turkey for Christmas Eve dinner in Madrid. This time it didn't catch fire. (new oven) I made "The Thanksgiving Dinner That Never Happened" for Christmas Eve dinner. My 4 Spanish guests seemed happy with the turkey and stuffing, mashed potatoes and gravy, cranberry sauce, and green bean casserole, though. (please, no smart-arse comments about the apron. hehehe...)

I just saw this post . Great photo MM . Looks very good . So , what´s happening - you get a new oven and a glass baking tray as a gift . Just the apron that needs to be changed and you´ll be on your way to being the Spanish Jamie Oliver !
I was the chef twice in England for christmas cooking at my mum´s house - a huge leg of lamb with garlic and rosemary , and a whole duck flavoured with honey and orange .
