hi all!!
does anyone have the recipe for patatas a lo pobre? i would greatly appreciate it as i am missing spanish cuisine terribly!! thanks!! smile

The recipe is basicly.. uneven chopped potatoes and sliced onion cooked very slowly on low heat with a little olive oil either in the oven or in a large frying pan..some add green peppers, tomatoes or chorizo.

Hi!

"Patatas a lo pobre" are ONLY potatoes, basicaly due to his name, that is "Potatoes for poor people"

Thay are the potatoes you put in oven only with salt and garlic (optional)

Patatas or Papas a lo Pobre.

Sliced potatoes, onions and green pepper sauteed gently in olive oil until soft and lightly browned, seasoned with salt only. Mmmm... Lovely! This IS authentic, made for me on a regular basis by someone who was a cocinera at the Parador of Nerja.

Funny...I've been eating "patatas a lo porbe" all my life and I never knew it! My mom would make me patatas or papas almost everyday...fry them up in olive oil(or corn oil), salt, pepper, garlic. She never called them by that name. At times she would add a couple of eggs into the potatos. Yumm!!! smile

Oso, I think this is an international recipe, because my husband, who is of Scottish descent, makes these, even before we knew each other. Now of course he uses olive oil! laugh

I must agree with you Booklady. My wife's family is German/English and the first thing she made for me after our honeymoon was...........patatas fritas. However, she grew up using butter to cook instead of olive oil. Well, a couple of years of marriage to this Hispano/Italophile and olive oil replaced butter, though I luv things cooked in butter!!! wink

If you're looking for Spanish recipes, you may want to check out the website of popular TV celebrity chef Karlos Arguiñano who has hundreds of recipes on his website Karlos Net . Incidentally in his fine book Driving Over Lemons, Chris Stewart mentions a character from the local Andalucian village who only eats this delicacy. One final point if you use the new Amazon search engine - a9.com - you can type in "patatas a lo pobre" and it will individual pages of books held in the Amazon index which refernce these words - it's really neat!
