Would appreciate any suggestions, recommendations or general dining advice for someone who is not a night owl and who is vegetarian. Yes, I know, I know, these are two major hurdles when visiting the city of meat-eating madrilenos. But can anyone point me in the right direction, particularly for breakfast and dinner. Do most restaurants offer non-meat options? Also, are produce markets and bakeries as plentiful and easy to find as in other European cities?

I've been to Madrid a couple of times and despite what you might expect the vegetarian choice is not bad. I can't remember the names of particular places now (I'm only talking about about 18 months ago though..) but a decent guide book will point them out to you. I stayed in the Hostal Lopez as mentioned and recommended here many times and there were quite a few places within either walking distance (at least 3) or only a few stops on the Metro.

I found some of the places a bit "worthy" if you know what I mean but some were excellent and seemed to attract all sorts just because of the good food.

Vegetarian shop and huge market nearby.Why not make your own bocadillos etc .Then you know they are vegy and you can eat anytime (day or night!)
