Many thanks - I made reservations via email to Casa Patas and they were very prompt with there confirmation. I am so looking forward to going. The email address I used was the one located on their site, cpatas@conservatorioflamenco.org . Does anyone know if Casa Botin has their own site? I couldn't seem to find it. I would like to try this with them too.
FYI, Los Gallos in Seville has a section of their site where you can make reservations.

If you can translate this, you might get an idea of the prices (I e-mailed them asking the same question, and this is the reply I received):

Les informamos de los precios de espectáculo y cenas.
De lunes a jueves el espectáculo son 21.64 Euros y comienza a las 22'30 horas
Viernes y sábado los espectáculos son 24.64 Euros y el 1º comienza a las 21'00 h. y el 2º a las 24'00 h.
Si desean cenar antes en el restaurante:
De lunes a jueves a las 21'00 horas para pasar si lo desean al espectáculo de las 22'30 h.
Viernes y sábado pueden cenar si lo desean a las 22'00 h. y pasar al espectáculo de las 24'00 h.
Durante el espectáculo de las 21'00 h. de los viernes y sábados pueden tomar raciones si lo desean.
La cena en el restaurante puede oscilar entre los 18.00 y 24.00 Euros, depende de lo que pidan.

I saw you had another post asking about non-touristy/cheaper places to see Flamenco in Madrid (actually, I had to guess that's what you were asking, because I don't really speak Spanish!!! frown

I was going to recommend La Solea, and found this fantastic page that someone has written up about where to see Flamenco in Madrid. La Solea is mentioned in the write-up. We visited 2 years ago and were not disappointed. If it was open in August (it isn't :p ) we would be going again this year. Interesting piece about Flamenco in Madrid and how to find the venues
