Recipe for Buñuelos Españoles?

Hola Amigos, Does anyone have a good recipe for buñuelos Españoles? I have to make some for my students, and I can't remember how to make them. I have a very vague memory when Granny (an Asturiana) made them, but I cannot find a recipe. All I find are recipes for Latin American buñuelos, but these use vegetables. This one is quite difficult Booklady.
BUÑUELOS DE VIENTO
1,5 deciliter water salt cinnamon a peal of a lemon 50 grams of butter 125 grams of flour 1/2 deciliter of brandy 3 eggs 1 "yema" (the yellow part of an egg) 1/2 liters of cream "azúcar glass" (small grain sugar) olive oil to fry
Put the water, the salt, the butter, the peal of the lemon and the cinnamon boiling.
When it starts to boil take out the cinnamon and the lemon and throw in the flour.
Mix with a wood spoon until the mix doesn't adhere to the walls of the recipient. Add the brandy.
Take it out from the cook and add the eggs one by one, then the "yema". Mix it until you have an homgeneous mass.
Heat the oil and fry the mass by spoons. beware that the mass doubles its volume.
When they have cooled fill them with cream and put some sugar on them.
Enjoy!

Pschhhhhh, one who likes eating This website is really cool (though is in spanish): http://www.afuegolento.com I've translated the recipes, and I have added or kept the ingredients according on how my mum cook the dishes (for example in the gazpacho recipe) Maybe some day I'll post my own recipes, or my mother recipes, then you will really want to eat your monitor screens Fernando

Hey Fernando, I am impressed by your ingenuity with the Internet! I think you might consider putting together the MadridMan Virtual CookBook. We can all add a dish every time we visit Spain, with pictures of course! MadridMan, I am so glad for you! Al fín! I too will be around town for Navidad y Fin de Año, but just heard that I had to leave on January 1st instead of the 2nd, because the airline cancelled my outgoing flight! But, what can one do given the circumstances. Booklady: Who is going to get sick eating Buñuelos de Viento and dreaming of eating Jamon Serrano!

Fernando, I tried the recipe for the buñuelos and they came out deliciosos! I added some ground anise seed ( anis molido) instead of the cinnamon, and I fried them in canola oil instead of olive oil! The only trouble I had was figuring out the metric system! My family loved them, so tomorrow I will bake another batch, along with a Flan to take to the students Monday. October is Spanish Heritage Month in my library and I always like to bring regional dishes from Spain, so our students can have a sample. In previous years I have made Caldo Gallego(a big hit with the faculty)y Bacalao a la Vizcaina. Mil Gracias, Booklady [ 10-27-2001: Message edited by: Booklady ]

Booklady, great! I'm glad the buñuelos turned out delicious The buñuelos is one of the most typical Madrid's recipe. My grandmother made them long time ago. Now my father buy them (yesterday he brought a whole dish of them and I remember this post). I think I'm going to try the recipe myself to see the result I was expecting trouble with the metric system, but I didn't find the equivalence with the imperial system You see, the flan is one of my favourite recipes. My mother make some incredible flans... It's incredible what the Internet can do to spread culture around the world... Fernando

Booklady, There´s a great link that might help you with the metric scale: www.onlineconversion.com And if you ever get tired of cooking, you can calculate the approximate number of workdays until retirement for example... Tia ;)(who started counting down the 5961 days left)
