I want to make paella next weekend and I have a recipe book from Spain. But I don't figure how I must put the prawns. They have to be peeled or something? boiled before I add them to the pot? I found only some frozen prawns.
And how much time I have to boil or fry them?

Don't peel the prawns. Let your guests do that. I would boil them in a pot first, and actually, since they are added later, you fully cook them first, then place them in a spiral around the paella pan (kind of like spokes on a wheel), depending on the number of prawns you're including.

No, no, you just thaw the prawns in the refridge overnite (or under cold water), rinse them, and cook them IN the paella. Then they give their nice flavor to the whole dish!

I certainly agree w/ rgf-
the shells will act as little steamers and they will cook in the dish no problem.

Whoops...you're right....I got carried away there. I just wanted to make sure you didn't peel the prawns (or any other shellfish for that matter). Put the prawns in the mix for cooking. Correct you two are!

and please don't put chorizo in the paella, in some american recipe books it says you must put chorizo in the paella and in some american restaurants they put chorizo, disgusting

I finally got to make paella last weekend. It tasted awesome. I didn't put chorizo, but I didn't find safron. Anyway, thanks fot the advices, the prawns were excellent, I didn't know that they can be cooked so fast (5 minutes or so). A lot of work though.

I've been promising to make paella for friends and just haven't gotten around to it. Yes, it is a lot of work. I have a great paella recipe, if anyone is interested. Of course, I always feel obligated to make sopa de ajo, una tortilla espanola, and flan for a proper Spanish feast. It makes for a very busy day.

If you can't find saffron at your local market, you'll need to take a trip to Spain. I use the "running out of coffee" excuse for frequently visiting Costa Rica.
