Beer!!
It is amazing how complementary is beer to so many Spanish dishes:
Gambas al ajillo (shrimps fried in olive oil with garlic and hot pepper)
Tortilla de patata (Spanish omelette)
etc........

If you are keen on beer I would stay away of Madrid Irish pubs (rather poor stuff)and would visit and original place like Naturbier. This may sound like advertisement but it isn´t. Naturbier is more than a well known place here because:

1) They have their self-made beer.

2) It is located in Madrid night life center, namely, Plaza de Santa Ana, number 9.
