I don't know about Madrid, but in Granada they celebrate "Dia de la Cruz", (Day of the Cross) which is an incredible thing if you can make it there. There are crosses built by different groups and set up all over town (even in front of McDonalds...) and at the Cathedral and many other spots (Campo del Principe is one) they have tents with food, drink and music set up and people dance Sevillanas all night long. Many people will even dress in the traditional outfits. It's quite impressive, like nothing I've seen before!
