"Is it any trouble to get from Spain to Portugal???"

No problem, good communications and there is no borders (no passport controls) since both countries are part of the EU.

"Can anyone recommend a killer coastal trek???"

Don't know sorry frown

"What/where is the "Rock"?"

I guess it is Gibraltar (el Peñón de Gibraltar), which is a british colony in the south of Spain.

"Is it any trouble to go to Morocco for a day?"

Don't know.

"What would the best way to do that from Spain?"

For sure the ferries (boats which can carry vehicles) that travel from Algeciras and other important southern cities.

Regards.

Fernando

If you're still talking about 7-days in Spain total, my suggestion would be: Don't even think about Morocco; and save Portugal for your next trip. The 'rock' of Gibraltar on the southern tip of the Iberian Peninsula is 'out of the way' for a 7-day visit.
BTW
You just 'think' you have 7-days. The first and last are not really full days. If your return flight is on Tuesday, you'll have to get to aeropuerto de Barajas 3-hours before departure. There went Tuesday! Monday is a shopping day since most museums are closed and most day-trip operators stand down on Mondays.
When you arrive in Madrid Wednesday AM, you will be very, very tired after flying all the way from SFO. Wednesday is a 'wash;' so when I have something similar I make a point of getting to my final destination that day (by train to Sevilla or Barcelona or Vigo or by Motorcoach to Santander or Bilbao), then I work my way back. 7-days probably allows a nice visit to Madrid and one other city (Sevilla or Barcelona, for example). When in Madrid, you can day-trip to Segovia and Toledo. If Sunday is a nice day, visit Retiro park (like Fisherman's wharf: street performers - but not as agressive). rolleyes
