Eli99, I'm not sure where you're located in Israel, but there is an Instituto Cervantes in Tel Aviv: telaviv.cervantes.es

Perhaps if you contact them they can give you suggestions for a version of "Don Quijote de la Mancha" for beginning learners of Spanish that would be available in Israel.
