For anyone visiting Washington DC or thereabouts, I recommend a restaurant in nearby Bethesda called "Andalucia." Run by a Spaniard, it produced for me the best and most authentic Spanish food I've ever eaten outside of Spain--and better than some I've had within Spain.

As I'm sure we have all observed, it's difficult to replicate Spanish food outside of Spain where the essential ingredients are not always available. These people do it.
