We would like to go to Spain for a week in early spring to enjoy the sun. We like the sea, but this is not a must. We prefere an area where there is a lot to see, and rather not above the line Valencia - Caceres (because of the weather and especially the wind).
Does anybody know a good aparthotel in a region where there are a lot of sights or possibilities for trips?

Sevilla will give you all you are looking for. Search for a hotel early though, as it is a popular time. Although you are within an hour of the sea, you'll have to be a hardy soul to get in it!
