Far and away the best choice for a primer in English is "Death in the Afternoon" by Hemingway.

Ditto on Death in the Afternoon. I am currently reading it and it has a wealth of details about bullfighting. It isn't Hemingway's best book by a long shot but it gives a pretty good gringo account of the corrida.
