What kind of Vineagar do they use when the serve it with the olive oil in Spain for the Salads. Is it just plain white vinegar or is it something else. Thanks

It's better than the plain white. You can use one of those italian wine-based vinegars and it tastes close. I just use italian balsamic and that is good enough!

Sherry vinegar works nicely too.

the type of white vinegar used is porduced by a company called borges. here in the united states the borges family sells their vinegar, olive oil, olives and capers under the brand name of "star." if you look in a good quality super market you'll find it. the name it actually appears under is "star: italian kitchen." however if you have a look at the label you will see written, "product of spain." sherry vinegar is good to use, but i tend to reserve that for gazpacho and salmorejo as it is quite strong.
