I agree with Kipper about Segovia, but in all fairness, I have not been to Santander. We spent 2 nights in Segovia last summer and I loved it. Can you spend 2 nights there and one night someplace else?

I can't imagine Segovia for 3 nights! However, it does give you the opportunity to visit La Granja,a short 10 mins bus ride from Segovia! I actually prefer to stay in La Granja, so often overlooked, rather than Segovia-a beautiful little town, wonderful palace with fabulous grounds- fountains, gardens and lots of little restaurants.
The best parador I have ever stayed in-take a peek inside!
